Tuna & Sweet Potatoes

Not together.
That would be disgusting.
(Unless someone has some fancy recipe they know of?)

We have tuna at least once a week around here. For lunch. My husband is not a fan so we make sure to eat it when he's not around yet.

It really is pretty simple, open a can, add some mayo, and presto! Lunch in a jif! But why not add a little something to it? Get those veggies in your diet that aren't always so easy to serve (or eat) by themselves.

A little grated celery and carrot (I've come to realize the smaller they are, the more likely your child is to eat them), even some pickle if you want, salt and pepper, oh, and how about a little garlic powder too? And you've just dressed up your plain tuna sandwich to a fancy (and healthier) tuna salad.


And my new food love? Sweet potatoes. One of the best vegetables you can eat. Chock full of vitamins A & C, potassium and fiber, these little tubers are a great trade for the Russet when making mashed potatoes or fries. And the best part? You don't even need anything extra to go along with them. No gravy. No ketchup. Just good, delicious sweet potatoes!

It's no wonder this pan of fries is more than halfway gone! I could seriously eat these every night.

    My brother made these for Thanksgiving 2 years ago, and I've made them every year since! (And sometimes just because!) They're SO good!!!
